Hedonistas de la Fe Cuishe is produced by maestro mezcalero Gerardo “Kaín” Santiago Hernandez in Santiago Matatlan, Oaxaca. Maestro Kaín is a fourth-generation mezcalero raised in Matatlan. This mezcal is made with Agave karwinskii that can take between 13-15 years to reach maturity. Once harvested, the agaves are cooked in an underground pit oven, milled by tahona, fermented in wooden vats with open air yeasts, and double distilled in copper alembic stills. The water for the palenque is provided by the family well, which has been in use for over sixty years, tapping into a pristine aquifer below. This pure, clean water is soft, with low minerality, and allows maestro Kaín to draw out the best flavors of the agave.
Flower-blossom forward, with gentle notes of lychee fruit. Gentle smoke and spice up front, very sake-like in mid-palate. The taste is floral, with a long, balanced finish. With plum and dried fruits and soft mouthfeel, this is an elegant mezcal.
