EntreManos Blanco Tequila - 750ml

This new tequila from Maestro Jaime Villalobos Sauza is distilled in the lowlands from 100% blue weber of course. The old Hacienda de Oro is an impressive facility, but they've given Jaime carte blanche to go wild in there and WILD is exactly what he's done. Using autoclave and roller mills to process the 7-year-old pinas, the mosto is introduced into stainless steel open tanks. Normally at this stage, yeast would be pitched to encourage a certain character and efficient conversion of sugars to alcohol, but instead they've simply let the ambient yeast do its thing. Natural spontaneous fermentation is much slower and less efficient and leaves rooms for other things to grow and add character to the wash. The result is a unique expression of terroir unlike any other on the shelf today. It's kosher, certified additive free, and packaged in a unique agave fiber wrapped bottle. Expect notes of sweet roast agave, dried herbs, and fruit. On the palate a rich creamy mouthfeel and refreshing citrus note balances the herbal agave character perfectly.
