Winemaker’s Notes:

This is the first Sparkling Rose that I made in my 19 years of winemaking. The varietals that I used to make this wine base were Grenache, Zinfandel, Syrah, Sauvignon Blanc and Tempranillo, all of which made from Estate grown grapes.  Each one of these varieties were fermented separately by first allowing the skins to soak in the juice long enough for the wine to acquire the desired color and flavor.  When the right color was achieved the must was separated from the juice and combined with the portion of the red wine coming from the same lot.  The base wines were inoculated and fermented to dryness in neutral oak barrels, at a controlled temperature of 60 degrees F.

This is a fruitful, complex sparkling wine with rich aromas of strawberry and orange zest.  On the palate it is complemented with notes of stone fruit and watermelon.  The fruitful finish is fresh with a bright clean acidity and the bubbles making this beverage exceptionally bright.  

This is a versatile wine that you can pair with a variety of foods, starting with cheeses, different kinds of seafood including shellfish and sushi, continuing into pizza, roast chicken and BBQ ribs and even with chocolate desserts.
